Ingredients

¾ cup Edmonds standard grade flour
1 tsp Edmonds baking powder
½ tsp salt
Black pepper
1 egg, beaten
440g can cream-style corn
2 Tbsps oil

Method

Sift the flour, baking powder, salt and pepper to taste into a bowl.
Add the beaten egg, mixing to combine. Stir in the sweetcorn.
Heat the oil in a frying pan.
Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
Drain on absorbent paper. Serve hot.

I add some grated orange kumara and some cayenne pepper to mine and serve with bacon and a side salad as a meal doesn't take too much extra to cook and tastes great As well...
