Have a can of cream-style corn in your cupboard? Then it may be time to give our sweetcorn fritters a whirl.

Sweetcorn Fritters

Ingredients

Method

  1. Sift the flour, baking powder, salt and pepper to taste into a bowl.
  2. Add the beaten egg, mixing to combine. Stir in the sweetcorn.
  3. Heat the oil in a frying pan.
  4. Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
  5. Drain on absorbent paper. Serve hot.

The only thing i made sure of is that be sure the batter is not too runny for fritters and cook them on a medium heat....it takes a while but they will cook all the way through (no one likes a gooey center fritter) also i added finely chopped up left over lamb coz thats what my mum did. Serve with sweet chilli sauce and boom!!!!

Add some finely diced onion as well, Mum always added it and I still do 55 years later

My daughter does them in a waffle maker. Cooks both sides as once without the oil. No need for draining. Nice and crispy.
