An oldie but a goodie! My mother used her Edmonds Cookbook circa 1950 to whip up batches of fritters for our childhood lunches. Dress it up with a gremolata, salsa or chimichuri. Accompany with tomatoes, bacon or sausages for a meal. Add grated onion, cheese and chopped herbs to batter to change it up.

I add some grated orange kumara and some cayenne pepper to mine and serve with bacon and a side salad as a meal doesn't take too much extra to cook and tastes great As well...
