Peanut Brownies

Ingredients

Method

  1. Preheat the oven to 180ºC. Line two baking trays with baking paper.
  2. Cream the butter and sugar until light and fluffy. Add the egg and beat well.
  3. Sift the flour, baking powder, salt and cocoa together and add to the creamed mixture. Add the peanuts, roughly chopped if you wish, and mix well.
  4. Roll tablespoonfuls of the mixture into balls, place on the prepared trays and press down with a floured fork.
  5. Bake for 15 minutes or until firm and coloured on the base. Leave on the trays for 1–2 minutes then place on a wire rack to cool.

Whenever my parents were away, our great aunt Winnie whose fiancé died in WW1, came to keep house.
Inter alia, she'd make Peanut Biscuits.. Oh the comfort in picking out and nibbling the peanuts grilled on the biscuits' extremities!
I leave out a spoonful of sugar and replace it with golden syrup or sometimes molasses/ treacle like she did. And to get the golden colour she achieved, I don't use cocoa, but anything yellow.. gram flour or a teaspoonful of turmeric.
She would encourage these variations; so do I.

As I don't like my biscuits sweet, I reduced the sugar to half a cup & they were just perfect. Will definitely be using this recipe again.
