Pikelets are delicious with butter and jam or jam and whipped cream - or with sour cream, smoked salmon and dill. To make American-style hotcakes, also known as pancakes, double this recipe and make them larger. Serve in a stack with butter, maple syrup, bacon and blueberries.

Light and fluffy, served with butter, lemon and sugar.
I made these exactly as the recipe states. I have a new top of the line non stick pan that i used to make them in. They were pale, stuck to the pan and the first batch went to the birds. 2nd fry i replied my pan with the iron skillet and buttered the pan. Much better, actually looked and behaved like pikelets. Sometimes the old way is a much better way.
Excellent, easy recipe. I cooked my pikelets in a toasted sandwich maker!! But the tops of my pikelets started to get sticky after a while...? Does anyone know why? Doesn't matter though - they still tasted delicious! Thank you Edmonds - all of your recipes are amazing.
