Sweetcorn Fritters

Have a can of cream-style corn in your cupboard? Then it may be time to give our sweetcorn fritters a whirl.

Sweetcorn Fritters

Ingredients

Method

  1. Sift the flour, baking powder, salt and pepper to taste into a bowl.
  2. Add the beaten egg, mixing to combine. Stir in the sweetcorn.
  3. Heat the oil in a frying pan.
  4. Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
  5. Drain on absorbent paper. Serve hot.

Been using this recipe from Edmonds cook book for about 55 years. Living in Belgium now and had a copy sent over from my late ex-mum in law 40 years ago. Great book of basic recipes.
