Name: Edmonds Sweetcorn Fritter

Ingredients: ¾ cup Edmonds standard flour; 1 tsp Edmonds baking powder; ½ tsp salt; Black pepper; 1 egg, beaten; 440g can cream-style corn; 2 Tbsps oil

Ingredients

¾ cup Edmonds standard grade flour
1 tsp Edmonds baking powder
½ tsp salt
Black pepper
1 egg, beaten
440g can cream-style corn
2 Tbsps oil

Method

Sift the flour, baking powder, salt and pepper to taste into a bowl.
Add the beaten egg, mixing to combine. Stir in the sweetcorn.
Heat the oil in a frying pan.
Drop spoonfuls of fritter mixture into the pan. Cook until golden then turn and cook the other side.
Drain on absorbent paper. Serve hot.

The recipe doesn’t mention liquid to
Bind the mixture together . Other recipes use cold water.

Served mine with tomato and chilli chutney, delicious

Way to salty, the mixter is dry so i added warter, the pepper was to much and dosen't say how hot to put the stove. to hot dosen't cook the middle and not hot enfuf is not going to cook it. So you have to just wing it... 1Star

I added some finely chopped onion into the mix and they were superb

Avo salsa and sour cream to serve - crispy bacon and salad to make it a meal yummo!

Grating a potato into the mixture is very nice as well.
