Ingredients

Method

  1. Preheat oven to 180ºC bake. Grease and line a 26cm loaf tin
  2. Sift flour, baking soda and salt into a bowl. Mix in sugar.
  3. In another bowl beat eggs. Stir in milk, butter and banana.
  4. Mix quickly into dry ingredients, stirring until ingredients are just combined.
  5. Spoon into the loaf tin.
  6. Bake for 45 to 55 minutes.
  7. Leave in tin for 10 minutes before turning out onto a wire rack to cool.

My mum and dad lived in NZ in the late 1950's and early 60's. On their return to Australia they bought with them Edmonds cookbook.
I am now 62 years young and I've been eating this banana cake/bread since I can remember.
Mums poor cookbook hasn't lasted the test of time but this recipe sure has. My family loves it.

Turned out amazing! I had to add a splash more of milk to my mix but other than that, tasted delicious and homely! I also added two handfuls of chocolate chips and vanilla extract. I wish I added some cinnamon though for a fuller flavour. Good thing about this recipe is that you can make slight adjustments quite easily to fit your own taste!
