I made this with skepticism. But the result was perfect. And in fact no different to my normal pasta just a bit more tender to handle and I suggest a hand rolling first before it goes into Marcato. I did add 1 tsp of xaxthium gum. I took it to number 6 but wouldn’t go past that. Held together well on the boil and was perfect! No different to my normal stuff
