Ingredients

Method

  1. Preheat oven to 180ºC. Grease or line a baking tray with baking paper.
  2. Cream butter, sugar and honey together until pale.
  3. Sift flour, baking powder and cinnamon together. Add sifted ingredients and rolled oats to creamed mixture, stirring well.
  4. Roll teaspoonful of mixture into balls. Place on the tray. Flatten with a floured fork and bake for 15 minutes or until golden.
  5. Transfer to a wire rack to cool.

These are quick and easy to make, and delicious. If lemons are in season add the finely grated zest of a lemon to the biscuit mixture before baking, and after baking once the biscuits cool, mix the juice of the lemon with icing sugar & drizzle over the biscuits for a citrus zing!

The yummiest cookie especially with a little extra cooking time to make them crunchy. It makes a perfect base recipe to add other ingredients to like sultanas or raisins, coconut, shopped nuts, chopped dates - take your pick. I find that as long as the extra ingredients are no more than a cup's worth there is no need to alter the measurements in the recipe, but it does pay to experiment a bit with items like coconut (less) and drier additions.
