Ingredients

Method

  1. Preheat oven to 180ºC. Grease or line a baking tray with baking paper.
  2. Cream butter, sugar and honey together until pale.
  3. Sift flour, baking powder and cinnamon together. Add sifted ingredients and rolled oats to creamed mixture, stirring well.
  4. Roll teaspoonful of mixture into balls. Place on the tray. Flatten with a floured fork and bake for 15 minutes or until golden.
  5. Transfer to a wire rack to cool.

Great recipe except far to dry. Wrong ratio of wet to dry. Had to add another 75g of butter to get it to form.

Delicious recipe! Made mine with chopped apricots, lemon zest and a spoon full of fresh lemon juice. This recipe mixture is on the dryer side, I needed to add a bit of extra milk at the end. Still turned out yummy and the smell of cinnamon, lemmon and baked oats - divine!

I added an egg, swapped sugar for brown sugar and only put 1cup of oats as my original lot was far too dry.

These are quick and easy to make, and delicious. If lemons are in season add the finely grated zest of a lemon to the biscuit mixture before baking, and after baking once the biscuits cool, mix the juice of the lemon with icing sugar & drizzle over the biscuits for a citrus zing!
