Festive Brownie

Ingredients

1 (560g) box Edmonds Double Chocolate Fudge Brownies

Brownie
2 eggs (size 6)
100g butter, melted
20ml water (4 tsp)

To Decorate
50g butter, softened
15ml milk (1 Tbsp)
assortment of toppings, i.e. sprinkles, chocolate fish, mini candy canes, chocolate-covered pretzels etc

Method

Brownie

  1. Preheat oven to 180ºC bake / 160ºC fan bake. Grease a 20cm square x 5cm deep cake tin and line with baking paper.
  2. Place brownie mix, eggs, butter and water in a medium mixing bowl. Mix with a wooden spoon until well combined. Spread into prepared tin. Bake for 30-35 minutes, until a skewer inserted into the centre comes out with a few moist crumbs. Allow to cool completely in tin.

To Decorate

  1. Remove cooled brownie from tin and slice into 9 even squares. Place on a board or in a gift box.
  2. Place icing mix, butter and milk in a medium mixing bowl. Using an electric mixer, beat on low speed for 30 seconds to combine. Increase speed to high and beat for 3 minutes.
  3. Ice each brownie square individually and decorate with different toppings.

TIPS

  • Can be made ahead of time for a gathering or gift (avoid decorating with items that may soften, i.e. cookies).
