Put the sausage meat or skinned sausages, onion, tomato sauce, salt and pepper and lemon zest in a bowl and mix well to combine.
Shell the eggs and divide the sausage meat mixture evenly into four. With wet hands, mould the sausage meat mixture around each egg.
Roll in the beaten egg, then in the breadcrumbs.
Deep-fry in hot oil for 8 minutes or until golden. Drain on paper towels.
Cut in half lengthwise and serve hot or cold.

Good basic recipe. 5 stars for the “wet hands” tip! Not one split! If they don’t cook all the way through (still undercooked sausage meat), cut in half and put in microwave 30 secs to finish off. Add in what you like. The beaten egg on the outside is not necessary; it changes the texture somewhat.
