Mock Cream

Use to replace fresh cream as a filling for sponges and cakes.

Mock Cream


  • 100g butter, softened
  • 1 cup Chelsea icing sugar
  • 1 Tbsp Meadow Fresh milk
  • ΒΌ tsp vanilla essence or
  • 1 tsp finely grated lemon zest


  1. Cream butter and sugar until light and fluffy. Add milk and vanilla.
  2. Beat until thick and pale like cream.
