Sift the icing sugar into a bowl. Add the butter and enough water to bring the icing to a spreadable consistency then mix in the vanilla.
VARIATIONS
Chocolate Icing
Sift 2 tablespoons cocoa with the icing sugar. Add extra water if necessary.
Coffee Icing
Dissolve 2 teaspoons instant coffee in 1 tablespoon hot water and mix into the icing sugar.
Lemon Icing
Replace the vanilla with 1 teaspoon finely grated lemon zest and replace the water with lemon juice. Add a few drops of yellow food colouring if you wish.
Orange Icing
Replace the vanilla with 2 teaspoons finely grated orange zest and replace the water with orange juice. Add a few drops of yellow and red food colouring if you wish.
Peppermint Icing
Replacethe vanilla with ¼ teaspoon peppermint essence and add a drop of green food colouring if you wish.
