Moist Chocolate Dinosaur Cake

The Cake (this makes two cakes for optimal decorating):

The Decoration:

  • Chocolate Chip Cookies
  • Toy Dinosaurs

  • 200g Dark Chocolate
  • 400g Milk Chocolate
  • 75g Butter
  • 1 ¼ Cup Meadow Fresh Cream

The Cake:

  1. Preheat oven to 160°C. Grease and line the bases of 2 x 20cm cake tins with baking paper.
  2. Place the cake mix, soft butter or margarine spread, eggs and milk into a medium mixing bowl.
  3. Using an electric mixer beat on low speed for 30 seconds to combine. Increase speed to medium and mix for 2 minutes, scraping down sides of bowl occasionally.
  4. Divide and pour mixture evenly into the tins.
  5. Bake for 20 to 25 minutes or until the cakes spring back when lightly touched. Leave in the tins for 10 minutes before turning out onto a wire rack to cool.

The Decoration:

  1. Make the chocolate ganache with milk chocolate.
  2. Let the ganache cool until thickened (not hardened). Use some to stick the two cakes/layers together, and the rest to ice the cake. Put the cake in the fridge until the icing sets.
  3. Make another batch of ganache using dark chocolate. When cool (but not thickened) pour on top of the cake and push over the edge to create drips.
  4. When ganache is almost set, crumble cookies and place on top of the cake and around the base.
  5. Place toy dinosaurs on the cake!
