Berry Rustic Galette Tart


 4 cups mixed berries – strawberries, blueberries, raspberries etc

1/4 cup raw sugar, plus extra to sprinkle

1 tsp vanilla extract

zest of 1 orange

1 Tbsp Edmonds Standard Flour

1/4 tsp sea salt

1/4 cup berry jam

2 sheets Edmonds Sweet Short Pastry


To make dough from scratch follow the instructions here


  1. Preheat oven to 190°C and line an oven tray with baking paper.
  2. Slice strawberries and place in a bowl along with other berries, sugar, vanilla, orange zest, flour and salt. Stir to combine and set aside.
  3. Place one Edmonds Sweet Short Pastry sheet on the oven tray, lay the other one on top and press gently to join.
  4. Brush the pastry with jam, pile berries into the center, and fold the edges in to form a rustic pie crust.
  5. Brush the crust with more jam, and sprinkle with sugar.
  6. Place in the oven for 25-30 minutes, until the pastry is golden brown. Remove from oven and serve with French Vanilla ice cream.
