Nichola Jacobsen's Friands

This is a more traditional friand recipe from the Mount's Nichola Jacobsen, containing gluten which makes it a little lighter in texture. Tart fruit or berries work best.



  • 1 cup ground almonds
  • 1½ cups icing sugar
  • ½ cup Edmonds standard flour
  • ½ tsp Edmonds baking powder
  • 175g butter, melted
  • 6 egg whites
  • ½ punnet or ¾ cup mixed fresh raspberries and blueberries (frozen fruit can be used)


  1. Preheat oven to 180°C
  2. Mix almonds, icing sugar, flour and baking powder together well.
  3. Lightly whisk the egg whites by hand until loose and a little frothy - not quite soft peaks.
  4. Add melted butter and whisk well to combine, ensuring there are no lumps.
  5. Pour into greased friand tins, and place favourite seasonal fruit carefully on top.
  6. Bake in the over for 20 minutes. They may need a little longer to be golden in colour.
