Christine Thackwell's Oatmeal Raisin Cookies

Ingredients

185g sugar

2 eggs, large at room temperature

185g brown sugar

250g butter, cubed and softened

235g Edmonds Standard Grade Flour

½ tsp Edmonds Baking Powder

200g rolled oats

180g raisins

1/3 tsp salt

½ tsp nutmeg

60g coconut (long thread)

Method

  1. Preheat oven to 160°C fan bake

  2. Process the eggs and the sugar in a food processor until creamy. Gradually add butter until pale.

  3. In a large bowl mix the remaining ingredients.

  4. Add the butter mixture into the dry mixture

  5. Form into balls the size of a big walnut and press down with a fork to 3mm high.

  6. Bake for 20 to 25 minutes, changing trays halfway through if baking two or more trays at once.
