Mini Lemon Berry Cheesecakes

Presentation of these little cheesecakes is the key to success. Try mixing it up with different flavoured jellies.

  • 1 packet Edmonds Continental Cheesecake Mix
  • 6 Tbsp butter, melted
  • 11/2 cups cold Meadow Fresh milk
  • finely grated zest from 2 lemons
  • 1 packet lemon jelly
  • Fresh berries to decorate


1. Combine the biscuit mix from the pack with the melted butter then divide evenly into 6-8 glasses.

2. Into an electric mixer bowl place milk and the contents of filling sachet. Beat on low speed until all ingredients are moistened. Beat on medium speed for 3 minutes or until thick and creamy. Stir through lemon zest.

3. Add filling evenly to the glasses. Place glasses in the fridge for at least one hour.

4. Prepare jelly according to the packet, and chill until cold but not set. Add jelly mix evenly to the glasses, and refrigerate until set. Serve with fresh berries on top.
