Lynda’s Chocolate Cake

This cake is super easy to make and delicious!

Ingredients

  • 2 cups Chelsea white sugar
  • 2 eggs
  • 200g soft butter, OR 100g soft butter and 100g rice bran oil
  • 1 ½ tsp vanilla
  • ¼ tsp salt
  • 1 cup sour milk (i.e. 1 cup of milk and 2 tsp vinegar) OR Unsweetened yoghurt
  • ¾ cup cocoa
  • 2 tsp of Edmonds Baking Soda
  • 3 cups of Edmonds Self Raising Flour, OR Edmonds Standard Grade Flour
  • 3 tsp Edmonds Baking Powder
  • 1 cup boiling strong coffee (2 tsp of instant coffee in one cup of boiling water)

Method

  1. Preheat oven 160°C
  2. Grease and line 23cm x 23cm tin
  3. Put all ingredients into cake mixer and beat well
  4. Turn into the prepared tin and bake for 1 hour
  5. Ice with Chocolate Icing and decorate with walnuts


A few tips and tricks for this cake:

  • Use buttermilk or raspberry/strawberry yoghurt instead of soured milk
  • Put everything in at once in the order that it is written and mix – super simple
  • Use a 25cm round tin and shorten the cooking time to around 40 minutes. You can easily double the recipe – Aunty Billie used to double the recipe and cook it in a roasting pan. This way she could cut it into 4 and share it with everyone, you never left the house empty handed.
