Chorizo and Roast Pumpkin Pizza

Freshly roasted pumpkin, chorizo, spinach and feta pizza topped with our Caramelised Onion Mayo. Easy cafe-style homemade pizza to wow your family or guests.

  • 100g semi-dried tomatoes
  • ½ small butternut pumpkin, peeled and cut into cubes
  • sea salt and fresh ground black pepper
  • 2 pre-prepared pizza bases with tomato sauce
  • 200g Meadow Fresh mozzarella cheese, grated
  • 100g baby spinach leaves
  • ½ small red onion, finely slices
  • 2 chorizo sausages, sliced
  • 100g Puhoi valley feta cheese
  • Edmonds caramelised onion sandwich mayo
  • Lemon wedges to serve


  1. Preheat oven to 200°C.
  2. Drain oil from semi-dried tomatoes into a bowl then toss in pumpkin before laying out on a baking tray. Season with salt and pepper and roast until tender. Remove and set aside.
  3. Top pizza bases with mozzarella cheese followed by spinach leaves, onion, pumpkin, chorizo and semi-dried tomatoes. Crumble feta on top and bake until bases are golden and mozzarella has melted.
  4. Remove from oven and drizzle Edmonds Caramelised Onion Mayo on top. Serve with lemon wedges.
