Apricot Balls

Moist and fruity alternative to the chocolate truffle.

  • 200g dried apricots, chopped

  • ½ cup orange juice
  • ¼ tsp citric acid
  • ½ cup coconut or melted chocolate
  • 1 cup coconut
  • 1 cup fine biscuit crumbs
  • ½ cup icing sugar

  • 1. Put the apricots, orange juice and citric acid into a saucepan, cover and bring to the boil, then reduce the heat and simmer for 10 minutes. Set aside to cool. 

  • 2. Purée apricot mixture in a food processor or blender and put it into a bowl. 

  • 3. Add the icing sugar, the first measure of coconut and the biscuit crumbs and mix well. 


  • 4. Scoop out tablespoonfuls of the mixture and roll them into balls, then roll in the second measure of coconut or dip in melted chocolate. Chill until set.
