Jam Tarts

As made by the Queen of Hearts – very simple and always popular. Use your best homemade jam.

  • 350g Sweet Shortcrust Pastry or 2 sheets Edmonds sweet short pastry, thawed

    FILLING:

    ½ cup tart-flavoured red jam

    whipped cream (optional)


  • 1. Preheat the oven to 200ºC.

  • 2. Roll out the pastry to 3mm thickness or use the ready-rolled sheets. Cut out 7cm rounds with a cutter and use them to line shallow patty tins.

  • 3. Prick the bases with a fork and chill the cases for 10 minutes. Place a small teaspoonful of jam into each case.

  • 4. Bake for about 10 minutes. Place on a wire rack to cool and serve plain or with a little whipped cream in each.
