Gluten Free Chewy Date & Coconut Slice

  • 1 cup Edmonds Gluten Free Plain Flour

    1 cup pitted dates, chopped

    1 cup caster sugar

    1 cup desiccated coconut

    90g butter, melted

    1 Tbsp golden syrup

    1 egg, beaten

  • 1. Preheat oven to 180°C or 160°C fan-forced. Grease and line a 27x13cm slice pan with baking paper, allow paper to overhang edges of the pan.

  • 2. Combine sifted flour, dates, sugar and coconut together in a bowl. Add melted butter, golden syrup and egg. Mix together until just combined.

  • 3. Spoon mixture into prepared pan and press gently. Bake for 20-25 minutes until golden.

  • 4. Cool in pan for 5 minutes then while still warm, mark into slices, allow to cool in the pan completely before using the overhanging baking paper to lift slice out of pan.
