Spinach Salad

Spinach Salad

Ingredients

1 bunch spinach

6 to 8 mushrooms, sliced

2 spring onions, sliced

1 orange, peeled and segmented

3 rashers bacon, cooked and diced

¼ cup French Dressing or Edmonds Deli Style French vinaigrette

2 hard-boiled eggs, chopped

¼ cup toasted flaked almonds

Method

1. Tear spinach into bite-sized pieces and place in salad bowl.

2. Add mushrooms, spring onions, orange segments and bacon. Chill before serving.

3. When ready to serve add French Dressing and toss. Garnish with eggs and flaked almonds.
