  • 2-3 cups diced cooked potato  

    2-3 spring onions, sliced           

    2 hard-boiled eggs, chopped    

    1-2 tsp mint, finely chopped

    ½-1 cup Mayonnaise, French or Yoghurt Dressing

  • 1. Gently combine all ingredients. Chill before serving.


    VARIATIONS

    Any of the following can be added:

    • 1 green or red pepper, sliced
    • 1 Tbsp chopped chives or parsley
    • 2 to 3 rashers bacon, cooked and diced
    • ¼ cup toasted sunflower or sesame seeds
    • ¼ cup sliced gherkins
    • 4 radishes, sliced
    • handful of baby spinach
    • ½ red onion, sliced
