Crisp Chorizo & Tomato Salad

Fresh herbs and our French dressing finish this medley of tomatoes, chorizo and Spanish onion to perfection

  • 6-8 large beefsteak tomatoes (large field tomatoes if unavailable)

    1 small red onion, sliced

    ¼ cup chopped flat leaf parsley

    2 Tbsp hand torn basil leaves

    3 cloves garlic, thinly sliced

    ¼ cup olive oil

    2 chorizo sausages, sliced

    ¼ cup Edmonds Deli Style French Vinaigrette Dressing


    1. Chop the tomatoes roughly and add sliced onion. Season generously with salt and pepper and herbs and toss.
    2. Heat olive oil in a small pot over low to medium heat and add chorizo slices. After a couple of minutes add the garlic watching carefully so it doesn’t burn. Just as the garlic begins to colour remove chorizo and garlic and add to tomatoes.
    3. Add French dressing and a couple of spoonfuls of the chorizo cooking oil and toss.
