Risoni Salmon Frittata with Whole Egg Mayonnaise

This rich frittata is made with our mayonnaise and filled with smoked salmon, vegetables and risoni pasta

Ingredients

1 cup risoni pasta

olive oil spray

6 eggs

½ cup Edmonds whole egg mayonnaise

200g smoked salmon slices, chopped into strips

½ cup peas

½ cup red capsicum, diced

2 Tbsp chopped chives

1 Tbsp lemon zest

Method

 

  1. Cook the risoni in salted boiling water until tender. Drain and cool.
  2. Pre heat oven to 180°C. Spray 20 x 30cm baking dish with olive oil, line base and sides with baking paper.
  3. In a large bowl, whisk eggs and mayonnaise until combined then fold in cooked risoni, smoked salmon, peas, capsicum, chives, lemon zest and season with salt and pepper. Pour mixture into prepared baking dish and bake in oven for 30-40 minutes or until firm and golden brown.
  4. Remove from oven and leave to stand in baking dish for 10 minutes before serving. Serve with garden salad and an extra dollop of mayonnaise.
