Garlic Chicken Skewers with Avocado Dressing

Serve these crowd-pleasing skewers at your next entertaining weekend anytime of the year, but you'll have to be warned, your guests will be asking for more next time!

  • 1 lemon

    4 garlic cloves, thinly sliced

    olive oil

    4 chicken breast

    chopped coriander

    Edmonds Deli Style Avocado and Roasted Garlic Dressing

  • 1. Squeeze the lemon into a large bowl, then slice remaining lemon and add. Add sliced garlic, salt and pepper and ΒΌ cup olive oil.

  • 2. Butterfly chicken breast and cut into strips. Place in marinade and refrigerate for 45 minutes. Soak 12 bamboo skewers during this time, in cold water.

  • 3. Thread the chicken strips onto the bamboo skewers and grill on a hot BBQ for 10 minutes, turning frequently. Drizzle generously with Avocado and Roasted Garlic dressing before serving.
