Short pastry is typically used for pies, tarts and quiches. This version makes it very quick and easy to prepare, so you can call the whole dish your own.
2 cups Edmonds standard flour
¼ tsp salt 125g butter
cold water to mix
1. Have the butter and water very cold and dice the butter into small squares. Put the flour and salt into the food processor and drop in the butter a few pieces at a time. Pulse until the mixture resembles coarse breadcrumbs. Add water by the teaspoon and pulse until the mixture begins to clump together.
2. Turn out onto a lightly floured surface, and working quickly, knead lightly using the heel of your hand to push the pastry away from you. Wrap in greaseproof paper and chill for at least 10 minutes.
