Cheese Pastry

A short cheese pastry excellent for that old party favourite - cheese straws.

  • 1½ cups Edmonds standard flour

  • 1 tsp Edmonds baking powder
  • ¼ tsp salt
  • pinch of cayenne pepper
  • 75g butter
  • ¾ cup grated tasty cheese
  • 3 Tbsp milk, approximately

  • 1. Sift together the flour, baking powder, salt and cayenne pepper.

  • 2. Rub in the butter with your fingertips until the mixture resembles coarse breadcrumbs, then add the grated cheese.
  • 3. Bind to a soft, but not a sticky dough with the milk, form into a rectangular block, wrap and chill for 10 minutes.
  • 4. Roll the pastry out to 5mm thickness on a lightly floured board and use as required for savoury pies, tarts and quiches.
