Pure white and perfect for icing your Rich Christmas Cake or Gingerbread People. Royal Icing sets very hard and is the best icing for piping decorations. This quantity is sufficient to ice and decorate a 20cm square fruit cake.
4 egg whites
500g icing sugar, sifted
1 Tbsp lemon juice
few drops of glycerine*
*Glycerine is not essential, but it helps prevent the icing from becoming too brittle and difficult to cut neatly.
1. Beat the egg whites until frothy and liquid.
2. Sift the icing sugar then gradually add to the egg whites, beating all the time. Stir in the lemon juice and glycerine.
3. Keep the bowl of icing covered with a damp cloth until you are ready to use it.
