Pumpkin & Goat’s Cheese with French Viniagrette

​Add some flavour to your winter roast pumpkin with our French dressing, feta and herbs.

1 small pumpkin, deseeded and cut into wedges

4 cloves garlic, skin on

olive oil spray

¼ tsp smoked paprika

½ cup sage leaves

1 Tbsp lemon thyme leaves

¼ cup Edmonds Deli Style French ViniagretteDressing

200g feta


  1. Pre heat oven to 180°C.
  2. Line a baking tray or shallow roasting dish with baking paper and spray with olive oil. Add pumpkin wedges on their side, garlic cloves and sage leaves. Season with salt, pepper and smoked paprika. Roast for 15 minutes then flip each wedge to roast for a further 15 minutes.
  3. To serve, spoon French Dressing over each piece of pumpkin, crumble feta over and sprinkle fresh lemon thyme.
