Peanut Sauce for Satay

Satay is an Indonesian word for small pieces of meat – chicken, pork or beef – grilled on skewers and usually served with a spicy peanut sauce. Here is a tasty, simplified version of the sauce. Also try it as a dip with raw vegetables or with cold chicken.

  • 2 Tbsp oil

    1 clove garlic, crushed

    1 onion, chopped

    ¼–½ tsp chilli powder

    ½ cup crunchy peanut butter

    1 Tbsp soy sauce

    1 Tbsp lemon juice

    1 Tbsp brown sugar

    ¾ cup coconut cream

    salt

  • 1. Put the oil, garlic, onion and chilli powder in a saucepan and place over a moderate heat. Cook gently until the onion is translucent, about 10 minutes.

  • 2. Stir in the peanut butter, soy sauce, lemon juice and sugar, then add the coconut cream. Season with salt to taste.
