You can use this as a dip, spread on pita bread or as an accompaniment to salad.

  • 1 cup chick peas

    ½ tsp salt

    1 spring onion, finely chopped

    3 Tbsp tahini (sesame seed paste)

    2 cloves garlic, crushed

    2 Tbsp lemon juice

    1 Tbsp parsley, finely chopped

    2 Tbsp olive oil

    extra oil

  • 1. Put the chick peas into a bowl. Cover with boiling water. Stand for 1 hour. Drain. Cook in boiling, salted water for 1 hour or until tender. Drain and allow to cool.

  • 2. Put chick peas into a food processor or blender. Add onion, tahini, garlic, lemon juice, salt, parsley and oil. Process until smooth. More oil may be required to blend to a smooth paste. Chill until ready to serve.
