Mini Lemon Berry Cheesecakes

Presentation of these little cheesecakes is the key to success. Try mixing it up with different flavoured jellies.

  • 1 packet Edmonds Continental Cheesecake Mix

    6 Tbsp butter, melted

    1½ cups cold milk

    finely grated zest from 2 lemons

    1 packet lemon jelly

    fresh berries to decorate

  • 1. Combine the biscuit mix from the pack with the melted butter then divide evenly into 6-8 glasses.

  • 2. Into an electric mixer bowl place milk and the contents of filling sachet. Beat on low speed until all ingredients are moistened. Beat on medium speed for 3 minutes or until thick and creamy. Stir through lemon zest.

  • 3. Add filling evenly to the glasses. Place glasses in the fridge for at least one hour.

  • 4. Prepare jelly according to the packet, and chill until cold but not set. Add jelly mix evenly to the glasses, and refrigerate until set. Serve with fresh berries on top.
