Easy Fruit Sponge

You can vary the stewed fruit by season to make a quick and satisfying dessert all the family will enjoy.

  • 3 cups stewed fruit

    1 packet Edmonds Golden Butter Cake Mix

    60g butter, softened

    2 eggs

    ¾ cup milk

    icing sugar

  • 1. Preheat oven to 180ºC. Grease a large ovenproof dish.

  • 2. Put stewed fruit into the bottom the dish.

  • 3. Put cake mix, eggs, butter and milk into a medium mixing bowl. Using an electric mixer, beat on low speed for 30 seconds to combine. Increase speed to medium and mix for 2 minutes. Scrape down sides of bowl occasionally.

  • 4. Pour mixture over fruit.

  • 5. Bake for 35 to 40 minutes or until sponge springs back when lightly touched. Serve dusted with icing sugar.
