Filled Breakfast Croissants

Use bought croissants to make things quick and easy for a special breakfast.

  • 4 croissants
  • 4 rashers bacon
  • ½ avocado, sliced
  • 1 tsp lemon juice
  • pepper
  • chutney
  • 1. Cut croissants in half horizontally, almost right through. Set on an oven tray and keep warm until ready to fill.

  • 2. Remove rind from bacon and cook until crisp. Keep warm.

  • 3. Brush each slice of avocado with a little lemon juice.

  • 4. Divide bacon and avocado among croissants. Season with pepper to taste. Serve warm with chutney of your choice.;

    VARIATIONS:

    Any of the following can be used as a filling -;

    • ham and cheese;
    • cooked bacon and mushroom;
    • smoked chicken and mango
