Sweet and chewy little morsels in which fruit and nuts are bound together with sweetened condensed milk. Try any mixture of fruit and nuts that takes your fancy.
1 cup fine desiccated coconu
¾ cup sweetened condensed milk
1 cup chopped dates
½ cup crystallised ginger
½ cup chopped dried figs
1 cup chopped raisins
½ cup chopped walnuts
1 Tbsp lemon juice
extra fine desiccated coconut
1. Preheat the oven to 180˚C. Line two baking trays with baking paper.
2. Combine all the ingredients except the extra coconut in a large bowl and mix well. If the mixture is too sticky to handle, add more coconut.
3. Shape tablespoonfuls of the mixture into fingers, roll them in the extra desiccated coconut and place on the prepared tray.
4. Bake for 20 minutes until golden brown and firm. Slide the baking paper onto a wire rack to cool completely.
