Banana & Walnut Loaf

  • 2⅔ cups Edmonds Banana Cake Mix

    1 egg

    2 Tbsp vegetable oil

    ½ cup cold water

    2 mashed ripe bananas

    ½ cup walnuts, chopped

  • 1. Preheat the oven to 170ºC conventional or 150ºC fan-forced. Grease and line a 23cm loaf tin with baking paper

  • 2. Place all ingredients into a medium mixing bowl except the walnuts. Using an electric mixer beat on low speed for 1 minute to combine. Scrape down the sides of the mixing bowl and mix for a further minute. Mix in the walnuts then spoon batter into the prepared tin.

  • 3. Bake for 45-50 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave in the tin for 10 minutes before turning out onto a wire rack to cool completely.
