Banana & Chocolate Chip Muffins

Use our Edmonds Banana Cake mix to create these delicious, moist muffins.​

  • 2⅔ cups Edmonds Banana Cake Mix

    1 egg

    2 Tbsp vegetable oil

    ½ cup cold water

    2 mashed ripe bananas

    ½ cup chocolate chips

  • 1. Preheat the oven to 170ºC conventional or 150ºC fan-forced. Grease a standard 12-hole muffin tin or line with cupcake cakes.

  • 2. Place all ingredients except the chocolate chips into a medium mixing bowl. Using an electric mixer beat on low speed for 1 minute to combine. Scrape down the sides of the mixing bowl and mix for a further minute. Mix through the chocolate chips then spoon the batter evenly into the prepared tin.

  • 3. Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Leave in the tin for 5 minutes before turning out onto a wire rack to cool completely.
